Serving up food fit for royals

HE MAY or may not bump into Aussie model Miranda Kerr or Prince Charles and his wife Camilla at the Central Coast Leagues Club, but internationally experienced chef Ryan Smith is looking forward to his new job as the club’s head chef.

Originally from South Australia, Mr Smith lived and worked in London from 2004 to 2012 including as part of an event catering team that cooked for celebrities and royals.

“We did polo days and royal movie premieres, I didn’t really get to meet the royals because I was stuck out the back, but they seemed pleasant people.”

Mr Smith also worked in a two-star Michelin restaurant as pastry chef and was part of the opening team for Bill Granger’s London restaurant in Notting Hill.

He came back to Australia in 2012 where he continued with event catering including a Mother’s Day lunch ­organised by Miranda Kerr.

“She was just lovely, such a nice person,” he said.

He moved to the Central Coast two years ago and says he has fallen in love with the region.

“I don’t think I will ever go back to Sydney,” he said.

“Things are really starting to happen in Gosford.”

That would include a major renovation of the club’s entire ground floor to include all the gaming, bars and most of the food outlets.

His aim is to introduce restaurant quality food.

“Everything will be a lot fresher and food will be of restaurant quality,” he said.

“I have introduced a simple menu which we will ramp up as the renovations get closer.

“I’m looking forward to making the restaurant a destination for lunch or dinner and changing the perception of ‘club food’.
“The ultimate aim for myself and the staff is to provide … an up-market, fine coastal dining experience.”
